Guest Cuppers: Petra Veselá + Gwilym Davies
Petra Veselá is a barista, café-owner, World Coffee Events certified judge, coffee educator, and author of two authoritatively renowned Czech-language coffee books, A Book about Coffee and A Big Book about Coffee.
Gwilym Davies, is a barista, roaster, trainer who's worked at the likes of Monmouth Coffee and opened Prufrock Café in London. He's also your 2009 World Barista Champion.
Together, Petra and Gwilym own the Naughty Dog coffee roastery in Jílové, Czechia. I cannot encourage you more strongly to enjoy the images on their Instagram (@the_naughtydog).

4.1 El Mirador
Cantillo variety produced and washed by Edgar Garcia Ossa 1500 meters above sea level on his farm, El Mirador, in Divino Niño, Suaza, Huila.
This coffee was imported by Osito Coffee.
4.2 Inzá Decaf
A mix of varieties--primarily Caturra, but also Colombia, Castillo, Typica--produced and washed 1,700 to 2,000 meters above sea level by members of Asorcafe Producers’ Association in Inzá, Cauca, Colombia.
This coffee is then decaffeinated via the ethyl acetate process, wherein a naturally occurring ester (found in fruits and fermented sugars) bonds to and removes caffeine. Ethyl Acetate coffees are known for their sweet, fruited, if not always balanced cups.

4.3 Elvis Tineo Rafael
A mix of Caturra, Bourbon, and Catuai produced and washed by Elvis Tineo Rafael 1,750 to 1,950 meters above sea level on his farm in El Diamante, Jaen, Peru.
This coffee was imported by Falcon Coffees.
4.4 Bishan Dimo
A mix of heirloom varieties produced by neighboring farmers and washed between 1,850 and 2,050 meters above sea level by Faysel and Hakime Yonis in the Denbi Uddo kebele of the Shakiso woreda, Guji, Ethiopia.
